The Real Gluten Free

It's been 10 years now that I've officially been diagnosed with Celiac Disease and I am forever grateful that it happened. Again, turning a negative situation into a positive, I no longer fuel my body with inflammatory garbage that once made me feel sick, bloated and well...... a chubby wubby. 

Growing up I lived off wheat and gluten. Pasta, Kraft (Crap) dinner, and bread was my saviour. For those of you who don't know me I have the appetite of someone who hasn't touched food for years and all of a sudden has 8 meals in front of them. I'll eat every single bite off all those 8 plates. I could eat 25 pieces of sushi in one sitting, 3 bowls of white rice at a time, and an entire banana chocolate chip bread (gluten free of course) in one helping. I am the ultimate pig. I dare you to watch me;)

Losing my gluten license (lol) was devastating for me. Gluten what? I didn't even know what the hell it was when I was first diagnosed. My doctor suggested a gluten free diet so I don't die at the age of 50, gave me pamphlet on Celiac disease and said, "have fun"!. So for those of you who say you would "die" if you had to stop eating gluten, the fact of the matter is you would die if you continued to eat gluten as a celiac.  And - guess what? You would still live. Why? Because I am still alive. 10 years later. Imagine that- and way more skinny too;)

Whatever cards you are dealt with, there is always a way. You will survive and get over whatever obstacle life throws at you - even if it is as simple as adapting to gluten free bread. Trust me. Things always work out.
